Saag Grill Toast
Vegetable grill toast
A buttered, grilled sandwich in which leftover vegetable saag is layered with sliced tomato (and optional cheese) between bread slices and grilled until golden. Savoury and crisp outside, eaten hot with tomato ketchup or Dharan ji chutney; phulka can replace the bread for a quesadilla-style version.

Measure in
Cups are shown in grams or ml; spoons stay as spoons. Panja Khada’s own weights are used where they give them (1 cup of flour is 150 g, rice or dal 200 g, curd 225 g, milk or water 240 ml), and standard kitchen weights otherwise.
Method
Tap a number to tick off a step.
Butter all the bread slices.
Slice the tomatoes.
Spread 2 spoonfuls of the leftover vegetables in the centre of a bread slice and cover it with 3–4 tomato slices.
Add a cheese slice if using. Place a second slice of bread on top, buttered side facing the filling. Add a dash of butter on top of the bread before grilling, for colour.
Grill the sandwich until the bread is golden brown.

Tips and variations
Variation: use phulko in place of the bread slices — grill it the same way, cut it into quarters like quesadillas, and serve with ketchup, chutney or any dip.
