Cups are shown in grams or ml; spoons stay as spoons. Panja Khada’s own weights are used where they give them (1 cup of flour is 150 g, rice or dal 200 g, curd 225 g, milk or water 240 ml), and standard kitchen weights otherwise.

In a paat (bowl), mix the whole-wheat flour and water into a semi-soft dough.
Cover with a damp cloth and rest for .
Divide into 4 equal portions.
Flatten each portion.
Sprinkle a little whole-wheat flour on the chaklo (rolling board) so the phulko does not stick to the belan (rolling pin), and roll each portion out. Use the flour sparingly, because too much makes the phulko dry.
Heat a tawa (griddle) on a medium flame. When hot, lay the rolled dough on it and cook until brown spots appear; turn and cook the other side.
(Optional) Using the chimpto (tongs), move the phulko onto a direct flame; it will puff up.
As soon as it starts to puff, take it off, dab a little ghee on it and fold it in half and in half again. Serve piping hot.
