Servesabout 3

For the vadis

  1. Soak the horsebean lentil in water overnight, about 10–12 hours. Grind it in a mixer with water into a thick batter. Add some salt, stir well and set aside.

  2. Heat the frying oil in a kadai. Take some batter in your hand and drop it straight into the oil, shaping it round. Fry until golden brown.

  3. Remove the vadis, drain off the excess oil and set aside.

For the vegetable

  1. Wash the cluster beans and cut them into 1" pieces.

  2. Heat the 3 tbsp oil in a kadai. Add the chopped green chillies and asafoetida and let them temper.

  3. When the chillies start popping, add the cut beans. Add water, just enough to cover the beans, then the salt and turmeric.

  4. Bring to a boil; once it is boiling, turn to a low flame until the beans are cooked.

  5. When the beans are tender, add the fried vadis with the coriander powder, cumin powder and raw mango powder (and the sugar, if using). Mix gently so the vadis stay whole and do not break. Cook for a few minutes. The vegetable should be very thin — almost watery.

  6. Garnish with finely chopped coriander leaves and serve hot.

These are estimates, worked out from the amounts in the recipe and typical values for each ingredient. Portion sizes and the exact amount of oil, ghee or sugar can change them a lot. For deep-fried food we count the oil the food soaks up, not the whole pan of oil. How we estimate
