  1. Soak the Bengal gram in water for before cooking.

  2. Peel the bottle gourd and cut it into small triangular pieces. Clean the waterfern and chop it finely. Wash both vegetables thoroughly.

  3. In a deep pan, heat the oil on a medium flame. When hot, add the asafoetida and let it temper.

  4. When the colour of the asafoetida changes, add the Bengal gram, chopped green chillies, peeled and finely chopped ginger, salt, turmeric, the chopped vegetables and the dill leaves. Stir well and cover the pan with a lid.

  5. As it cooks, water comes out of the waterfern and the gourd and the vegetables cook in it. Add a little water only if that is not enough.

  6. When the lentil and vegetables are cooked, take the pan off the flame and mash lightly with the back of a round spoon so the vegetables and lentil mix thoroughly.

  7. Simmer for a few minutes and serve hot.
