Singhi Batatay jo Saag
Drumsticks with potato curry
A tangy, spicy gravy of boiled drumstick (singhi) pieces and potato (batatay) in a base of gram flour roasted with tamarind water, tempered with green chillies and hing. The finished saag is curry-like, thinner than a purée, and is eaten hot with phulko (soft flatbread).

Cups are shown in grams or ml; spoons stay as spoons. Panja Khada’s own weights are used where they give them (1 cup of flour is 150 g, rice or dal 200 g, curd 225 g, milk or water 240 ml), and standard kitchen weights otherwise.

Peel and wash the potatoes and cut them into medium pieces; cut the drumsticks into 2-inch pieces. Boil both until tender.
Make the tamarind water. Soak the tamarind in a cup of water, squeeze it well so it mixes thoroughly with the water, then strain.
In a vessel, mix the gram flour with the turmeric, red chilli powder, coriander powder, salt, sugar and the tamarind water. Blend well until smooth.
Heat the oil in a pan over a medium flame. When hot, add the chopped green chillies and asafoetida and let them temper.
When the green chillies start popping, add the gram flour mixture and roast it for a few minutes.
Add the boiled potatoes and drumsticks and 1 cup of water. Cook for about , or until the gravy thickens. Adjust the seasoning and serve hot.
