Sprouted whole green gram
Whole green gram (moong) sprouted at home in a damp cloth, then cooked in a light tempering of green chilli, ginger and hing and finished with turmeric and lime juice. A simple, fresh-tasting, mildly tangy sprout dish eaten hot with phulko (soft flatbread). Start a day ahead: the gram is soaked and then left to sprout before you cook it.
