Spiced black-eyed peas
Boiled black-eyed peas (cow peas) and potatoes in a tangy tamarind-and-gram-flour gravy, spiced with green chillies, red chilli and coriander. A versatile dish.

Cups are shown in grams or ml; spoons stay as spoons. Panja Khada’s own weights are used where they give them (1 cup of flour is 150 g, rice or dal 200 g, curd 225 g, milk or water 240 ml), and standard kitchen weights otherwise.
Method
Tap a number to tick off a step. Tap a time to start a timer.
Soak the cow peas in water for before cooking.
Boil them.
In a separate vessel, peel the potatoes, cut them into medium pieces and boil them.
Make tamarind water. Soak the tamarind in a little water, squeeze it so the pulp mixes into the water, and strain.
Add the gram flour, red chilli powder, coriander powder and a little plain water to the tamarind water and mix thoroughly.
Heat the oil in a toap (deep vessel) on a medium flame. When hot, add the chopped green chillies and asafoetida.
When the chillies start popping, add the tamarind mixture and roast it for a few minutes.
Add the boiled cow peas, the boiled potatoes and a little water. Cook for a few minutes until the gravy turns thick, then add the salt.
Serve hot, garnished with chopped coriander leaves.
