Method

  1. In a pan, heat the Dar Palka subzi (cooked vegetable dish) until its water evaporates, stirring until it turns lumpy. Take it off the flame and set aside.

  2. Boil the potato, mash it and set aside. Boil the carrot and green peas and set aside.

  3. In a separate pan, dry-roast the 1 tsp gram flour for a few minutes. Add it to the cooked Dar Palka along with the finely chopped ginger, chopped green chillies, chopped coriander leaves, salt, coriander-cumin powder and lemon juice, and stir well.

  4. Add the boiled peas and carrot, then the mashed potato. The potato is only a binder: add just enough to bind the mixture and let you shape the patties, without letting its taste overpower the Dar Palka.

  5. Mix to a semi-soft dough.

  6. Divide the dough into 6–8 balls and flatten each into a round disc about 1 inch thick. Cook them in a non-stick pan with minimal oil.

  7. Turn and cook until light brown on both sides. Serve hot.
