Lentil-dough puri

Cups are shown in grams or ml; spoons stay as spoons. Panja Khada’s own weights are used where they give them (1 cup of flour is 150 g, rice or dal 200 g, curd 225 g, milk or water 240 ml), and standard kitchen weights otherwise.
Method

Cook the dar in a pan over a medium flame, stirring constantly, until the water evaporates and the dar thickens. Take it off the heat and set aside.
Put the whole wheat flour in a bowl and make a well in the centre. Add the cooked dar, salt, ghee or oil and the warm water, and knead into a semi-soft dough.
Cover the dough with a damp cloth and leave it for .
Divide the dough into 6–7 equal portions.
Flatten each portion and roll it into a 5-inch pancake, dusting with a little wheat flour.
Heat the frying oil over a medium flame. When it is hot, slide in one puri at a time and press it gently with a perforated frying spoon so that it puffs up. Puris puff only when the oil is quite hot.
Fry until both sides are golden brown.
Lift out, drain off the excess oil and serve hot.
