Tir ja Ladoo
Sesame seed and jaggery balls
Wholesome sesame-and-jaggery ladoos tied to winter festivals: dry-roasted tir (till/sesame) seeds are folded into jaggery syrup boiled until it is thick and leaves the sides of the pan, and shaped into medium balls while the mixture is still hot. A mitho tea-time snack, always made for Sankranti.

Clean the sesame seeds.
In a kadai (wok-style pan), roast the sesame seeds on a low flame, stirring continuously, until they start tempering (they begin to crackle and pop in the heat).
Take the seeds off the flame and set them aside.
In a deep pan, heat the jaggery on a medium flame, stirring until it melts and forms a thick syrup. When the syrup starts boiling and leaving the sides of the pan, add the roasted sesame seeds and mix well until thoroughly blended.
Form medium-sized balls while the mixture is still hot.
Let the ladoos cool, then use as required.
