Tee Dali Poath/Maghamethi Pakoras
Fritters made from leftover lentil curries
Crisp, tikho (spicy) deep-fried (taraylo) pakoras: 1 cup of poath or maghamethi is stirred into a thick gram-flour batter with green chilli, ginger, coriander, mint, spinach and pomegranate seeds, and spoonfuls are dropped into hot oil without any set shape. A tea-time snack.

Cups are shown in grams or ml; spoons stay as spoons. Panja Khada’s own weights are used where they give them (1 cup of flour is 150 g, rice or dal 200 g, curd 225 g, milk or water 240 ml), and standard kitchen weights otherwise.
Method
Tap a number to tick off a step.
Take the dried mango, cocum (kokum) and curry leaves out of the Tee dali Poath / Magha methi.
In a bowl, mix the gram flour with 1 tbsp hot oil and enough water to make a smooth batter of medium consistency (the hot oil is what makes the pakoras crisp). Add the Tee dali Poath / Maghamethi and blend thoroughly.
Add the finely chopped ginger, chopped green chillies, chopped coriander and mint leaves, chopped spinach, salt, coriander powder and pomegranate seeds, and mix thoroughly.
Heat the frying oil in a kadai (deep frying pan) over a medium flame. When it is hot, drop in small balls of batter one at a time — they need no neat shape — until the kadai is filled.
Fry over a medium flame until golden brown.
Lift the pakoras out with a perforated spoon and drain off the excess oil.

Tips and variations
Hot oil in the batter makes the pakoras crisp. Remove the dried mango, kokum and curry leaves first.
Serve with
Served hot as a tea-time snack with green coriander chutney.
