Poath ji Curry
Tempered leftover lentil curry
Leftover dal curry thinned with water and pressure-cooked with potato, drumstick, yam and cluster beans in a fresh tempering thickened with roasted gram flour. The result is a khatto-mitho (sour-sweet) vegetable curry — cocum (kokum) or tamarind for the sour, jaggery for the sweet — with mild heat; eaten with steamed rice. Uses up: leftover Tuvar ji Poath (pigeon-pea dal curry) or Teedali Poath (three-lentil curry). A traditional way to revive leftover poath.

Method

If the poath is very thick, thin it with water to a watery consistency.
Cut the potato and yam into medium pieces and the drumstick into 2-inch pieces. Cut the cluster beans too; they cook with the other vegetables.
In a pressure cooker, heat the oil on a high flame. When hot, add the mustard, fenugreek and cumin seeds, asafoetida, chopped red and green chillies and curry leaves. When the mustard seeds start popping, add the gram flour and stir continuously to roast it.
Add the chopped vegetables and the thinned poath.
If the mixture looks too thick, add a little more water.
Add salt, turmeric, jaggery, cocum (or tamarind) and tomato paste.
Put the lid on the cooker and let it cook.
Pressure-cook until the first whistle. Serve piping hot, garnished with chopped coriander leaves.

Tips and variations
Thin the poath first and adjust with water if still thick. Cocum or tamarind are interchangeable as the souring agent. Cut the cluster beans and cook them with the other vegetables.
Serve with
