Servesabout 4
Timeabout 35 min

A moist, tangy-spicy (khatto, tikho) "saag" of phulka pieces folded gently into a mustard-seed tomato masala with green chillies, coriander, red chilli, turmeric and dry mango powder, cooked with a little water until slightly thick. A classic Bhatia way to use up leftover phulka, made in many homes. Served hot for breakfast or as an evening snack.

  1. Cut the phulkas into medium-sized pieces and set them aside.

  2. Chop the tomatoes and green chillies, and finely chop the ginger.

  3. Heat the oil in a pan over a medium flame. Add the mustard seeds and let them sputter. Then add the tomatoes, green chillies, coriander powder, red chilli powder and turmeric powder and mix well.

  4. Cover the pan and cook for a few minutes, until the tomatoes are tender.

  5. Add the phulka pieces and mix gently so that they stay whole.

  6. Add the ginger, water, dry mango powder and salt, and cover the pan.

  7. When the mixture has become a little thick, take it off the flame.

  8. Serve hot, garnished with finely chopped coriander leaves.
