Cabbage vegetable rice
A one-pan, mildly spiced rice (choka) tempered with mustard seeds, curry leaves and green chillies, coloured with turmeric and given a gentle sour note by mango powder (amchur). Uses up: Pan Gobi jo Saag (the Bhatia cabbage dish), stirred in once the rice is half cooked. Eaten at lunch.

Cups are shown in grams or ml; spoons stay as spoons. Panja Khada’s own weights are used where they give them (1 cup of flour is 150 g, rice or dal 200 g, curd 225 g, milk or water 240 ml), and standard kitchen weights otherwise.

Soak the rice in water for before cooking.
Heat the ghee in a deep pan over a medium flame. When it is hot, add the mustard seeds.
When the mustard seeds begin to pop, add the curry leaves, the chopped green chillies and the chopped tomato.
Drain the soaked rice, add it to the tempered spices and mix well.
Pour in 1½ cups water.
Let the rice cook until the water has reduced by half. Add the Pan Gobi jo Saag, red chilli powder, mango powder, turmeric powder and salt and mix well. Turn the flame down to low and cook until the rice is fully cooked and all the water has dried up.
Garnish with chopped coriander leaves and serve piping hot.
