Servesabout 11
Timeabout 1 hr

A rich, grainy gram-flour (besan) fudge: besan is roasted in ghee to a chocolate brown, moistened with milk, bound with a very thick 3-string sugar syrup, set in a greased thali and finished with poppy seeds. A mitho dessert for any meal or a tea-time sweet. It is considered one of Lord Krishna's favourite sweets.

  1. In a kadai (wok-style pan), heat the 50 g ghee on a medium flame. When it has melted, add the gram flour.

  2. Keeping the flame medium, roast the gram flour until it is chocolate brown in colour. Only then add the milk, stirring continuously.

  3. In a separate vessel, make a sugar syrup of 3-string consistency: heat the water, add the sugar and keep stirring until the sugar melts and the syrup reaches 3 strings; it will be very thick.

  4. Add the sugar syrup to the gram-flour mixture and mix thoroughly. Keep cooking until all the syrup has blended in and the mixture has thickened.

  5. Transfer the mixture to a greased thali (plate/tray).

  6. Sprinkle the poppy seeds over it while it is still hot. Let it cool and set.

  7. Cut into small pieces.
