Dinner · Raat jo Khado
Marriary jo Tikho Saag
Spicy green amaranth
Marriro (green amaranth) leaves cooked with split green gram, green chillies and ghee, soured with dried raw mango or lime juice and only lightly mashed so it stays textured. This is the spicy ("tikho") counterpart of Mariray jo Mitho Saag.

Cups are shown in grams or ml; spoons stay as spoons. Panja Khada’s own weights are used where they give them (1 cup of flour is 150 g, rice or dal 200 g, curd 225 g, milk or water 240 ml), and standard kitchen weights otherwise.
Method

Soak the split green gram in water for before cooking.
Break the marriro leaves off the stems with your hand (marriro is traditionally broken by hand rather than cut with a knife) and wash them thoroughly.
In a kadai, heat the ghee on a medium flame. When hot and melted, add the chopped green chillies and asafoetida and let them temper.
When the chillies start popping, add the soaked lentil and roast for a few minutes.
Add the cut marriro and, if using, the dried raw mango pieces. Add ½ cup of water, cover the kadai with a lid and let it cook.
When the greens are cooked and the lentil is tender, mash the mixture slightly, without making it a puree. Add the salt and, if you did not use the dried raw mango, the lime juice. Mix well.
Cook a few more minutes and serve hot.
