Dodakiyon jo Tikho Saag / Dudhi Moonga ji Dar
Spicy bottle gourd with split green gram
Cubes of bottle gourd (dudhi, dodhakiyon) cooked with split green gram (moong dal), green chillies and a little mango powder; "tikho" (spicy) with a lightly sour finish. It cooks largely in the gourd's own water.

Cups are shown in grams or ml; spoons stay as spoons. Panja Khada’s own weights are used where they give them (1 cup of flour is 150 g, rice or dal 200 g, curd 225 g, milk or water 240 ml), and standard kitchen weights otherwise.
Method

Soak the split green gram in water for before starting.
Peel the bottle gourd and cut it into small rectangular pieces.
Heat the oil in a toap (deep vessel). When hot, add the chopped green chillies and asafoetida and let them temper.
When the chillies start popping, add the bottle gourd and stir for a while.
Add the split green gram, salt and turmeric and stir to mix well.
Add a little water and let it cook — only a little, because the gourd releases its own water as it cooks.
When the lentil and gourd are tender, add the dried coriander leaves and the mango powder, cook a few more minutes and serve hot.
