Dahi Wada
Lentil cakes in curd
Light, airy fried lentil fritters (wadas) that are soaked briefly in plain water, squeezed, dipped in beaten curd and served under more curd with red chilli, cumin and coriander, with optional tamarind and green chutneys. Cooling, creamy, mildly spiced and tangy; served chilled.

Cups are shown in grams or ml; spoons stay as spoons. Panja Khada’s own weights are used where they give them (1 cup of flour is 150 g, rice or dal 200 g, curd 225 g, milk or water 240 ml), and standard kitchen weights otherwise.

Wash the lentil and soak it in water for before you start. Drain the water when you begin.
Grind the lentil to a fine paste with very little water. The batter should be of pouring consistency, not very thick.
Add finely chopped ginger, chopped green chillies, cumin seeds, coarsely pounded peppercorns and salt. Mix well, then beat the batter for to work air into it.
Heat oil in a kadai (deep frying pan). When hot, use your hand to drop in medium-sized portions of batter; do not make them too large, so that the centres cook through. Fry until golden.
Lift the wadas out and drain off excess oil. Let them rest for a few minutes, then soak each wada in water for a few minutes — this stops leftover oil from continuing to cook the inside and helps the wadas take up curd.
Beat the curds with water to a thick, flowing paste. Lightly squeeze the excess water out of each wada without breaking it, then dip it in the beaten curd.
Arrange the wadas on a plate, spoon more beaten curd on top, and garnish with red chilli powder, cumin powder and finely chopped coriander leaves.

Everything in the ingredients list, plus the oil soaked up in frying.
These are estimates, worked out from the amounts in the recipe and typical values for each ingredient. Portion sizes and the exact amount of oil, ghee or sugar can change them a lot. For deep-fried food we count the oil the food soaks up, not the whole pan of oil. How we estimate
