Chokhan ja Uttapa
Steamed rice pancakes
Thick, savoury uttapas (griddle pancakes) made from a pourable batter of rice, gram flour and yoghurt with ginger and green chilli, topped with chopped tomato and green capsicum and browned on both sides. Eaten at breakfast or as an evening snack with chutney. Uses up: rice (choka) — "Chokhan ja" means "of rice".

Cups are shown in grams or ml; spoons stay as spoons. Panja Khada’s own weights are used where they give them (1 cup of flour is 150 g, rice or dal 200 g, curd 225 g, milk or water 240 ml), and standard kitchen weights otherwise.

Method
Tap a number to tick off a step.
In a bowl, combine the rice, gram flour and yoghurt with water to make a thick batter of pouring consistency.
Add the finely chopped ginger, salt and chopped green chillies to the batter.
Chop the tomato and green capsicum finely for the topping, mix them together and set aside.
Heat a flat griddle over a medium flame and pour the oil onto it.
When the griddle is hot, ladle on some batter and spread it into a circle like a pancake.
Keep the uttapa on the thicker side. Cook one side, then turn it over.
When you turn it, put some of the tomato-capsicum mixture in the centre.
Flip it again and cook the other side until light brown.
