Spiced Fritters (Pakora)

Sindhi-style twice-fried gram-flour fritters

Servesabout 5
Timeabout 1 hr 15 min

Gram-flour (besan) fritters flavoured with green chilli, ginger, mint, coriander and lime juice or raw mango. They are dropped into oil as irregular spoonfuls, fried only until pale yellow (about half-cooked), cooled slightly, broken in half and fried again until golden and crisp — a double-fried, extra-crunchy (taraylo, tikho) teatime snack served hot.

Method

  1. In a bowl, combine the gram flour with the salt, asafoetida, chopped green chillies, finely chopped ginger, chopped coriander and mint, the lime juice (or raw mango) and the warm oil. Mix thoroughly.

  2. Add the water gradually while mixing so no lumps form, until you have a semi-thick batter.

  3. Heat oil in a kadai (deep frying pan) on a medium flame. Drop in small lumps of batter of no particular shape, one by one, until the pan is filled.

  4. Fry until pale yellow — this means they are about half done.

  5. Lift them out with a perforated spoon and drain off the excess oil.

  6. Once they have cooled a little, break each pakora in half.

  7. Fry the halves again in hot oil until golden brown and crisp.

  8. Lift out with a perforated spoon and drain off the excess oil.

Tips and variations

Souring agent is either lime juice or chopped raw mango. The double-fry (fry, cool, halve, refry) is the signature step.

Everything in the ingredients list, plus the oil soaked up in frying.

These are estimates, worked out from the amounts in the recipe and typical values for each ingredient. Portion sizes and the exact amount of oil, ghee or sugar can change them a lot. For deep-fried food we count the oil the food soaks up, not the whole pan of oil. How we estimate
