Tips and variations
Chef's tip: timing is critical. Undercooked sago is gummy; overcooked sago clumps together. A well-made khichadi has separate, distinct pearls.
Serve with
Usually eaten at lunch, hot, with plain curd. It is an Igyas (Ekadashi fast-day) speciality.
