Phulka Noodles
Noodles cut from leftover phulka
Phulka cut into thin noodle-like strips and tossed with julienned carrot, capsicum and cabbage in soy sauce, tomato sauce and pepper — an Indo-Chinese-style stir-fry (sautéed, not deep-fried), savoury and peppery rather than chilli-hot, with the vegetables kept slightly firm. Eaten piping hot as an any-time snack. A modern fusion dish.

Cups are shown in grams or ml; spoons stay as spoons. Panja Khada’s own weights are used where they give them (1 cup of flour is 150 g, rice or dal 200 g, curd 225 g, milk or water 240 ml), and standard kitchen weights otherwise.

Cut each phulka into 4 squares, then slice the squares into thin, long strips so they look like noodles.
Cut all the vegetables (carrot, capsicum, cabbage) lengthwise into long thin strips and set them aside.
Heat the oil in a pan until hot. Add the carrot, capsicum and cabbage and sauté for about a minute.
Add the soya sauce, tomato sauce and pepper powder and mix well.
Add salt and keep sautéing until the vegetables turn slightly soft; sprinkle in a little water only if the pan needs it.
Add the phulka strips and mix well. Simmer for about , then give one quick stir. The phulka strips and vegetables should not end up very soft.
