Moongan ji Masala Puri
Green gram masala puri
Spiced whole wheat puris whose dough is built around 1 cup of moong worked in with ghee until the flour absorbs the moong's moisture, flavoured with cumin, turmeric, coriander-cumin, green chilli, ginger, coriander and mint, rolled to 5-inch discs and deep-fried (taraylo) until puffed. Savoury and herby; eaten at breakfast, lunch or dinner with masala chai, curd or green chutney.

Cups are shown in grams or ml; spoons stay as spoons. Panja Khada’s own weights are used where they give them (1 cup of flour is 150 g, rice or dal 200 g, curd 225 g, milk or water 240 ml), and standard kitchen weights otherwise.
Method
Tap a number to tick off a step.
In a paat (large flat dish used for mixing and kneading), combine the moong, whole wheat flour and ghee and mix until the flour has absorbed the moisture from the moong.
Chop the green chillies, ginger, coriander and mint finely.
Add the chopped ingredients, cumin seeds, coriander-cumin powder, turmeric, curd and salt to the moong-flour mixture.
Mix well and knead to a semi-soft dough, adding water in very small amounts at a time.
Divide the dough into 6 equal portions.
Flatten each portion and roll it with a rolling pin into a pancake about 5 inches across, dusting with a little wheat flour.
Heat the oil over a medium flame. When it is hot, slide in one puri at a time and press it gently with a kanch (perforated frying spoon) in the kadai (deep frying pan) so that it puffs up. Puris only puff when the oil is quite hot.
Lift out each puri and drain off the excess oil.

Everything in the ingredients list, plus the oil soaked up in frying.
These are estimates, worked out from the amounts in the recipe and typical values for each ingredient. Portion sizes and the exact amount of oil, ghee or sugar can change them a lot. For deep-fried food we count the oil the food soaks up, not the whole pan of oil. How we estimate
