Cups are shown in grams or ml; spoons stay as spoons. Panja Khada’s own weights are used where they give them (1 cup of flour is 150 g, rice or dal 200 g, curd 225 g, milk or water 240 ml), and standard kitchen weights otherwise.
Method

Blend the moonga ji dar to a puree in a mixer or blender.
In a bowl, stir 1 tbsp hot oil into the gram flour and whole wheat flour, then add enough water for a smooth batter of medium consistency. Add the dal puree and mix until fully blended.
Add the finely chopped ginger, chopped green chillies, chopped coriander leaves, salt, garam masala and asafoetida and mix thoroughly. The batter should be of pouring consistency.
Heat the frying oil in a kadai (deep round-bottomed pan) over a medium flame. When it is hot, drop in small balls of batter (any shape), one at a time, until the kadai is filled.
Fry the bhajiyas on a medium flame until golden brown.
Lift them out with a perforated spoon and drain off the excess oil.
