Measure in
Cups are shown in grams or ml; spoons stay as spoons. Panja Khada’s own weights are used where they give them (1 cup of flour is 150 g, rice or dal 200 g, curd 225 g, milk or water 240 ml), and standard kitchen weights otherwise.
Method
Tap a number to tick off a step.
In a vessel, mix the gram flour, water and 1 tbsp of the oil into a thick batter of pouring consistency.
Finely chop the green chillies, ginger, coriander leaves and tomato. Add them to the batter together with all the other remaining ingredients except the oil, and mix the batter thoroughly.
Heat a griddle on a medium flame and spread 1 tsp oil evenly over it. Spread half the batter evenly on the griddle. Pour a little oil around the edges of the spread batter and let it cook.
Turn the garari over and cook both sides until golden brown.
Repeat with the remaining batter.

Tips and variations
