Aami jo Saag
Raw mango relish
A quick stove-top relish (saag [a cooked side-dish]) of raw-mango (aami) strips tempered with cumin and green chilli, then cooked down with sugar until just thickened. It is khatto-mitho (sour-sweet) with a tikho (hot) edge, and is eaten at room temperature as a side.

Cups are shown in grams or ml; spoons stay as spoons. Panja Khada’s own weights are used where they give them (1 cup of flour is 150 g, rice or dal 200 g, curd 225 g, milk or water 240 ml), and standard kitchen weights otherwise.
Method
Tap a number to tick off a step.
Peel the raw mangoes and cut the flesh into thin, long strips.
Heat the oil in a kadai [Indian wok-style pan]. Add the cumin seeds and, once they start to splutter, add the chopped green chillies.
Add the mango, the salt, the turmeric powder and the red chilli powder; mix well.
Cover with a thali [flat metal plate, used here as a lid] and let it cook, stirring at regular intervals.
When the mango is nearly done and soft, add the sugar and mix thoroughly.
Let the sugar dissolve, stirring from time to time, and cook until the mixture turns slightly thick.
